El equilibrio entre precariedad y flexibilidad en la contratación hostelera
De un lado el sector económico hostelero es marcadamente estacional; y de otro, la Organización Internacional del Trabajo habla de "trabajo decente", "sostenibilidad social" y "modelo social de Estado". ¿Cómo se concilian estos dos polos? Más allá del Estatuto de los Trabajadores, la obra aborda la regulación de la contratación temporal y los procesos de negociación colectiva del sector hostelero.
El sector de la Hostelería presenta un importante peso en la economía, tanto española como en el ámbito de la Comunidad Valenciana, y ello, tanto en términos estrictamente económicos como de empleo generado, merced a su integración en el más amplio sector (en sentido lato) del Turismo, verdadero «motor» productivo en España, en épocas de crecimiento y, también, de crisis. No puede obviarse, además, que la Hostelería se caracteriza por ser un sector productivo significativa y tradicionalmente vinculado a exigencias estacionales, lo que implica la existencia de «picos productivos», con requerimientos extraordinarios de fuerza de trabajo que se satisfacen, por lo general, mediante el recurso a la contratación temporal.
